All the beers are newest to oldest in terms of when
they were brewed.
My favorites of all the recipes here so far has been the "bitter brown" as I called it,
and the copy of the Sierra Nevada IPA.
It's been a while since I brewed, time to get back into it...
Mike's SECOND 1999 IPA
7.5 pounds Alex. pale
1.5 pounds wheat
1 pound Baird English Crystal, 80L
2 ounces Columbus 60 min. 14 alpha
1 ounce Magnum 15 alpha 30 minutes
1 ounce Goldings finish
1 ounce Goldings dry hop
Cal Ale yeast from White labs.
Second try for an IPA in '99. You can see that this
is a style that I like
to try and copy.
This is a big beer, but with all the malt, it's not as bitter as
I wanted.
Mike's 1999 IPA
7 pounds Liquid Pale
1 pound Wheat DME
1 pound 60L Crystal
2 ounces Northern Brewer 60 minutes
1 ounce Challenger 30 minutes
1 ounce Mt Hood finishing
1 ounce Mt Hood dry hopping
California (SN) Ale yeast.
This did not turn out to be as bitter as I wanted, could have
used a few more hops.
I liked it, though. It is VERY clean tasting, and really
nice and dry.
Great with HOT Chinese food.
Christmas 1998
6 pounds English DME
pound 80L Crystal
pound Black roast
ounce Magnum whole hops 60 minutes
ounce Challenger plugs 30 minutes
one teaspoon each for 30 minutes:
nutmeg
cinnamon
ground clove
ounce Fuggles finishing
ounce Fuggles whole leaf dry hop.
Packet of Whitbread Ale yeast
This is not as bitter (once again) as I would have liked it to be, I would go for the full two
ounces of the
Magnum next year.
I really like this recipe I made, however. It has a really good taste, just needs
a little more
hops for me. Others seem to really like it.
Mike's bitter Brown
7 pounds pale liq
1 pound DME wheat
pound 120 crystal
pound Belgian carapils
ounce Nugget pellets 60 mins
ounce Nugget 30 mins
ounce Cent. end of boil
ounce Cent. dry hop
California Ale Yeast
This has such a great fruity aroma with the Centennial,
and is very popular with my friends.
Copy of Sierra Nevada IPA
6 pounds Brit DME
pound carastan
pound 80 crystal (would go with 60 next time)
1 and 1/2 Northdown pellets 60 mins
1/2 ounce ND and 1 ounce Challenger plugs 30
2 ounces EK Goldings end of boil
2 ounces Fuggles dry hop
California Ale Yeast
This is VERY hoppy and aromatic just like the original, though
when I went to the brewery over the
Thanksgiving weekend,
they said they were using Magnum hops(?). Well, the Northdown
works good, too.
If you see this stuff in a bar (SN, not mine) get a pint for sure.
The last place that I saw this was 99 Bottles in Santa Cruz on
Pacific Ave downtown.
Bitter Amber/Pale (made it up along the
way)
6.25 Alex pale liqu.
1.25 pale liqu. wheat
1 pound 60L Crystal
2 ounce cluster 60 min
1 ounce Columbus 30
one each Columbus and Centennial
end of boil
1 ounce Cent. dry hop
(and just for the hell of it, I had some extra Challenger plugs,
so I added a half ounce at the 15 and 45 min mark)
East Coast Ale Yeast
I wasn't too keen on this one, as I really don't care for the
East Coast Yeast. It was like the Sam Adams Stock Ale, but
some may like it.
The Centennial and the Columbus hops need a cleaner and a dryer
yeast than this one. You may like it, though.
